From the vineyard to the glass: the grape’s journey towards the best wines

Wine, the famous liqueur of Bacchus, has been produced since ancient times and is loved by many cultures around the world. But have you ever wondered how grapes turn into this tasty drink? The process involves a series of essential steps that combine tradition and innovation. We suggest you discover them up close below!

Cultivation of carefully selected varieties

The road to excellent wine begins in the vineyard, where the vines are carefully selected and cultivated. Choosing the right varieties for the specific climatic conditions and soil of a region is very important to obtain wines with distinct character. Modern winemakers have access to advanced soil and climate analysis technologies that allow them to make informed choices about the right varieties for a particular planting.

Furthermore, grapes can be selected and crossed to obtain new and interesting varieties that guarantee diversity in wine production. TO Gîrboiu winery, It all starts in our plantations, which extend over approximately 170 hectares and where we grow local varieties, such as Şarba or Plăvaie, but also globally popular varieties, such as Shiraz, Cabernet Sauvignon or Muscat Ottonel.

Careful harvesting, at the optimal time

The time of the harvest is another aspect on which the quality of the wine obtained depends. To achieve a perfect balance between sugar, acidity and aromas, the grapes must be harvested when the berries have reached the optimal level of ripeness. As a rule, winemakers closely follow the evolution of the grapes to determine the exact time of harvest and also determine which method is most suitable.

A manual harvest may be preferred for higher quality wines where attention to detail is essential. This meticulous process guarantees a rigorous selection of the grapes, eliminating incorrectly ripened or diseased grapes. This process also takes place within the Gîrboiu winery for the intended grapes fine wines.

However, in the modern wine industry, mechanized harvesting is often used for the efficiency and speed it offers, especially for high-volume wine production. Therefore, for an effective harvest of some varieties in our cellar, we have a harvesting machine from the Pellenc brand, which allows night harvesting of the grapes and a rigorous selection of quality.

How do we combine tradition with innovation?

The process of transforming grapes into wine combines traditional methods with modern technologies. After harvesting, the grapes are pressed to release the must, which contains sugars, acids, enzymes and aromatic substances. This is where innovation comes in: the Gîrboiu winery uses modern presses and equipment to extract the must in an efficient and controlled way.

Fermentation, the phase in which the sugars in the must are transformed into alcohol and carbon dioxide under the action of yeasts, takes place in stainless steel tanks for exceptional results. Temperature monitoring and fermentation monitoring technologies enable precise control over this essential process.

Wine maturation in oak barrels adds complexity and specific aromas. The choice of barrels and the duration of maturation significantly influence the final taste of the wine. From young, fresh wines, matured in new barrels, to complex, balanced wines, which spend many years in older barrels, tradition blends seamlessly with modern techniques.

After fermentation and aging in barrels, the Gîrboiu Winery integrates tradition with innovation through bottling and further refinement in the bottle. Modern technologies ensure precise bottling and authentic beverages that highlight our company’s commitment to quality. During refinement in the bottle, the wine is enriched with subtle aromas and is defined by reaching a perfect balance between acidity, tannins and final notes. Each bottle thus becomes a compelling story, which denotes our passion for viticulture!

Tasting and exploring flavors

The last stage of the wine’s journey towards the glass is the tasting, a moment full of refinement, capable of giving unique sensations. Professional tasters, or sommeliers, use their senses to evaluate aspects such as color, smell and taste. This practice is based on tradition, but in recent decades it has transformed into a real science of tasting, where terms such as “tannins”, “acidity” and “body” are used to describe the characteristics of the wine in detail.

However, any enthusiast can enjoy the best wines by choosing a quality assortment or by choosing them visit to the Gîrboiu winery. Here the experts provide a wide assortment of excellent wines, awarded internationally for their special characteristics!

Thus, from the vineyard to the glass, the grape road is a fascinating and complex journey. By carefully growing varieties, harvesting at the right time, combining tradition and innovation in the production process and carefully exploring aromas, at Crama Gîrboiu we manage to create exceptional drinks. Each glass of wine thus becomes a story full of flavour, which we invite you to discover!
